Happy New Year

My new year's feast this year will be...
Catfish Soup
Water
Boneless Catfish pieces poached in water.
Remove fish to air tight container and refrigerate.
Add to fish broth:
Frozen peas and carrots
Large diced yellow onion
Thinly sliced celery
Simmer 20 minutes.
Remove vegetables and store for for later.
Measure Fish and Vegetable broth and add additional water to make 3 Cups.
1 Cup long grain white rice simmered in the broth on medium for 20 minutes.
1/4 lb butter. Add to cooked rice.
Add
Sage
Rosemary
Salt
Black pepper
to taste.
1 can Evaporated milk.
Combine buttered rice and vegetables.
Divide among serving bowls.
Heat fish briefly in Microwave and place on top of rice/vegetable mixture.
Warm milk and divide among servings.
Adjust Salt and pepper at table.

December

Merry Christmas !

I enjoy the winter season. Sooo many excuses not to be outdoors. And this puts me at odds with thePOO in that he thinks rain is something special.

Now for the good part...FOOD!
This year it will be Ham.
Took me a year to find a seller of aged country hams.
We will have sweet potatoes.
Field peas with snaps and cooked "greens".
Sweet corn.
Southern style biscuits.
House wine is Alabama Sweet tea.
Desert will be fruit and nut pie with coffee.

Plenty of music on the radio as the TV is broke.

Thanksgiving

This is a good time of the year for me to make my first post as it's coming up on Thanksgiving and I have a lot to be thankful about. Especially since all that I got for Christmas last year was a heart attack. I am thankful that I am recovering.
Now on to the good part...FOOD !
We have on hand:
Turkey and Giblets
Ingredients for Southern style Dressin'.
These include, but are not limited to, cornbread, biscuits, crackers, cooked onions & celery, hard boiled eggs, and oysters if you got 'em, all mixed together in something about the size of an old fashioned wash tub. Salt and black pepper to taste.
Liquid ingredients are turkey broth and slightly beaten eggs. Must have enough liquid to be "sloppy". Just can't abide dry Dressin'.
Cranberry sauce
Turnip greens
Green beans -- Mine will be a casserole of green beans, onions and water chestnuts with a cheese and crumb topping. POO likes his straight out of the can.
Steamed Cauliflower
Baked sweet potatoes with orange zest and a half pinch of allspice.
House wine is Alabama Sweet Tea.
